This is the perfect time to switch from frozen food options (which are healthier than canned goods) to  fresh fruits and vegetables  because more of them are “in season”.  Some great choices include strawberries, apricots, cherries, pineapple (which is especially sweet in Spring), mangoes and kiwi.  Vegetables that are at their peak this time of year are asparagus, peas (like snap peas and snow peas), artichokes, spinach, radishes, arugula and fennel.  All of these fruits and veggies are not only flavorful but also packed with nutrients.  They make tasty additions to salads and smoothies or they can be enjoyed as a side dish or a snack.  One of our favorites is a tossed fresh spinach salad with a bit of red wine vinegar, olive oil, strawberries and a few walnuts  - a healthy and flavorful way to start out any meal!
